A native of Taiwan , Simon and his wife Lin came to the United States of America in 1985. The restaurant is the culmination of many years of hard work refining his skills as a Sushi Chef and a lifelong ambition to own his own restaurant.
The menu at Simon's draws heavily on Simons classic Japanese training as a Sushi chef over many years together with the American influences gained during his extensive travels. His innovative 'new style' Japanese cuisine is becoming both his trademark and the foundation of his success.
Simon enjoys nothing more that sharing his enthusiasm with his clients. After visiting a few times many regulars enjoy Simon presenting his latest creation that has just been unveiled.
